Our Feta ages beautifully, on a plate in the fridge, uncovered and turned every couple of days for 2-3 weeks for a firmer and more concentrated hard cheese that we turn into Parmesan! It will continue to be grate-ful and add to pizzas and all your Italian dishes. We use this in our house made Spanakopita ~ and you would never know it's not dairy Feta...
